چکیده
بررسی آلودگی فلزات سنگین در مواد غذایی ، بخصوص در ماهی و انواع فراورده های آن به عنوان شاخصی از آلودگی آبها، بسیار حائز اهمیت است. از این رو 6نوع تن ماهی موجود در بازار از مارک های معتبر بمنظور اندازه گیری فلزات سنگین (آرسنیک و جیوه) جمع آوری و آزمایش گردید. پس از آماده سازی با روش هضم تر ، میزان جیوه و ارسنیک بوسیله سیستم هیدرید با استفاده از دستگاه جذب اتمی وریان مدل 240 ESاندازه گیری شد. بر اساس نتایج بدست آمده در این تحقیق بر روی شش نوع تن ماهی مختلف در تمامی نمونه ها میزان آرسنیک کمتر از استاندارد ملی ایران و استانداردهای جهانی بوده است در حالیکه میزان جیوه در چهار نوع تن ماهی کمتر از حد مجاز استاندارد ملی ایران و در دو نوع دیگر آن با اختلاف معنادار نسبت به نمونه های دیگر، بالاتر از حد مجاز استاندارد ملی ایران تشخیص داده شد. مقادیر بدست آمده آرسنیک و جیوه در این تحقیق در مقایسه با استانداردهای سازمان بهداشت جهانی (WHO) آژانس حفاظت محیط زیست آمریکا (EPA)و سازمان غذا و داروی امریکا (FDA )و همچنین استاندارد ملی ایران گزارش شده است.
مقدمه
فلزات سنگین به عنوان یکی از مهمترین آلاینده های محیطی مطرح هستند که طی فرایندهای صنعتی، استفاده از کودهای فسفاته در کشاورزی و دفع فاضلاب نامناسب و … وارد محیط زیست شده و منجر به افزایش میزان سطح فلزات سنگین در آبهای زیرزمینی و خاک و در نهایت تجمع این فلزات در فراورده های غذایی را میشوند. این فلزات آسیب های جدی بر سلامت گیاه و دام داشته و مصرف فراورده های بدست آمده از آنها برای انسان نیز خطرساز است، لازم به ذکر است این فلزات بالقوه سرطانزا میباشند. در حال حاضر محصولات دریایی نقش قابل توجهی در تامین غذای مردم جهان دارند و با شناسایی مطلوبیت و برتری غذایی این فرآورده ها بر دیگر مواد پروتئینی، روز به روز بر مصرف آنها افزوده میشود. در ایران نیز مانند بسیاری از کشورهای دیگر، مصرف کنسرو ماهی بخصوص کنسرو ماهی تون بعلت استفاده راحت و آسان با مقادیر بالای پروتئین و اسیدهای چرب امگا 3و 6 و اسیدهای چرب اشباع شده آنها کم ترجیح داده می شود، بطوری که در سال ،1386کشور ایران با 134کارخانه کنسرو ماهی 569میلیون قوطی کنسرو ماهی تولید نموده است.
ABSTRACT
It is very important to study the contamination of heavy metals in food, especially in fish and its products as an indicator of water pollution. Hence, six types of tuna fish in the market were collected from authentic brands for the measurement of heavy metals (arsenic and mercury). After digestion, the amount of mercury and arsenic was measured by a hydride system using an atomic absorption spectrometer (240E). Based on the results obtained in this study, six different types of tuna fish in all samples showed less arsenic than the national standard and international standards, while the amount of mercury in four types of tuna was less than the national standard of Iran and in two The other type was distinguished by a significant difference compared to other samples above the national standard of Iran. The amounts of arsenic and mercury in this study have been reported in comparison with the World Health Organization (WHO) standards of the United States Environmental Protection Agency (EPA) and the Food and Drug Administration (FDA) as well as the national standard of Iran.

Currently, marine products play a significant role in providing food to the people of the world, and by increasing the desirability and superiority of these foods to other protein substances, their consumption is increasing day by day. In Iran, like many other countries, consuming canned fish, especially canned fish, are less preferred for easy and easy use with high levels of protein and omega 3 and 6 fatty acids and saturated fatty acids, which in 2007, Iran With 134 canned fish, 569 million cans of canned fish have been produced.
